I had a great weekend. Saturday we went to sign our contract for the apartment. One month left in my hometown and then it’s bye bye mommy, hellow freedom! I’m so gonna miss my home, mom and brothers. All the laughs we had together, watching tv together. My mom also told me it was going to be a big adjustment. I could tell she was a bit sad to see me go :(. I’m going to miss my sweet little Sushi the most! The way she comes to cuddle up against me when I’m watching tv…The only negative thing about the apartment is that we are not allowed to have pets! Who does that…Our landlady was a 80 year old widow who didn’t even remember we had an appointment:p don’t think she is going to check up on us that much. I’m going to enjoy the last month with my family!
Yesterday we also went to see some bands play. It was an awesome party! Only downside is I forgot my purse so I am currently without a bank card or ID. Now that I finally have money I can’t spend it :p! Ow well, those shoes can wait ;). Some pics from last night, not the best quality I now…
After the party we spent the night at a friend’s place. He has the cutest and fluffiest cat called Guust. Forgot to take a picture…Meet Mizze! Today was game day! Funny thing about this picture is that they switched t-shirts. Both shirts that they are wearing represent the team they kind of hate!
I also promissed to make cookies to bring with me to work tomorrow for my co workers but I didn’t know the recipe by hart and the internet was down all day…But now that it’s back up I can make them now! Not having a connection made me realize how much I rely on the internet…
I mother bought some instant coffee yesterday, mainly because she’s to lazy to start making a fresh pot of coffee in the evening. I must admit that normally I’m not a fan of instant coffee but this brand tasted ok. Funny thing is it was the cheapest she could find! This morning I got an idee in my head to use the instant coffee to make my bowl of oats. Success! I also drank a big cup of coffee with almond milk. This was a coffee themed breakfast for sure!
Instant Coffee Oats
- 1/2 cup oats
- 1/2 cup water
- 1/2 cup almond milk
- 1 tablespoon instant coffee
- 1 ripe banana
- some stevia to taste
Heat everything on the stovetop.
For toppings I used some chocolate chips, nut mix and a spoonful of nonfat yogurt. Definately making these again.
I had to work on my own the whole morning because my trainer had to be somewhere and wasn’t going to be back until noon. I did great! For lunch I made a salad including all sorts of veggies and mini falafel burgers. They looked adorable! Wish I could have taken a picture…The afternoon consisted of checking the work I did in the morning to correct any mistakes. Some minor mistakes but all in all I did ok.
When I got home I did my steady state cardio of the week. 60min on the stationary bike..so boring! I hate steady state cardio…But it had to be done. Also I had some delicious home made cake with frosting at work. It’s not polite to say no so with minor guilt I ate the peace ;).
For Dinner I had scrambled eggs with Hummus and baby carrots on the side.
Last night before I went to bed I took the time to make myself some pancakes for today’s breakfast. Was I glad this morning! A nice change from porridge or oats. I even dreamt about them I think :p. I also had a great night sleep. I hope every night will be as great from now on! Breakfast tasted awesome but my breakfast partner wasn’t all happy joy joy this morning. My brother is in his finals and had slept only 2 hours…not because he had to study, but because he had to much coffee during the day/ evening and just couldn’t sleep…one word, dumbass!
Whole Wheat Pancakes
- 1/4 C Whole wheat flour
- 1/4 C almond milk
- 2 egg whites
- pinch sea salt
- pinch Stevia
- coconut oil for cooking
- Heat pan on low/medium heat
- In the blender, add the milk, egg whites , flour, Stevia and sea salt and blend on high for 10 seconds.
- Cook pancakes 1-2 minutes until edges are dry, and gently flip. Cook for 1 minute on the other side.
- Makes 2 fatter pancakes or 3 thin crepes.
I ate mine with blueberries and greek yogurt.
For lunch I took some whole wheat pasta my mom cooked yesterday and added some tomato sauce with ground turkey. No picture though 🙂 not really comfortable yet with taking pictures of my lunch when there is people eating around me :p, Don’t think I’ll ever be. Tasted ok but not really a big a fan of ground turkey.
The Dutchman (Pieter) brought Dutch milk! I must admit he was right…better than Belgian milk. Then again we have way better beer! And better waffles and better chocolate. Belgium 3 the Netherlands 1 ;).
When I got home I was dead-beat again…but I did my workout! 40min on the stationary bike and some basic lifting (Squats, Plié’s, Bicep Curls, Tricep Kickbacks,…). So proud I did it! For dinner I didn’t make a big effort…I tossed together some veggies and canned mackerel. A pretty simple dinner but it tasted wonderful!
I felt better about my second day and I was way more productive today!
Next month the 40 days without meat kicks off. it’s an action in Flanders to increase ecological awareness. Every day without eating meat you save 1100L of water plus 2,1 kg less greenhouse gas emmision (equals 15km of driving a car). A lot of famous Belgian people are participating and so will I. Luckily I’m not a meat person :). I love chicken and fish, so that’s what I’ll be cutting back on. I don’t eat meat often, once or twice a week a piece of fish or chicken. It is shocking though what the effect is of eating your daily piece of meat!
This morning I had porridge again with half a sliced banana.
Last night we recieved a fresh layer of snow…I’m starting to grow tired of snow! Bring on spring already! For lunch I made some Italian Stuffed Zucchini Boats. They where delicious!
Stuffed Zucchini Boats
- 2 medium zucchini
- 2 garlic cloves, minced
- 1 medium tomato, seeded and finely chopped
- 1/2 cup finely chopped fresh mushrooms
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/4 tsp. crushed red pepper flakes
- 2 Tbsp. olive oil
- 3/4 cups shredded Parmesan cheese, divided
- 2 tsp. fresh basil, chopped
- Preheat oven to 400°F or 200°C.
- Cut zucchini in half lengthwise; scoop out pulp and seeds, leaving 1/4-inch shell (use a small spoon for this). Reserve pulp from two zucchini and chop. Combine zucchini pulp, garlic, tomato, mushrooms, basil, oregano, crushed red pepper flakes, olive oil and 1/2 cup cheese in a medium bowl. Divide mixture among zucchini shells.
- Place stuffed zucchini in a 13 x 9 baking dish; cover with foil. Bake for 25 minutes or until zucchini is tender. Sprinkle with remaining cheese. Bake uncovered 5 minutes more or until cheese is melted. Top with fresh basil.
In a way they tasted like pizza! 😉
For dinner I had some more zucchini boats.

I had to get out of bed at half past 6 this morning to go to Zaventem and do some more interim testing. The test results were good, not easy doing language, admin and organization skills tests so early in the morning ;). The lady interviewing me seemed nice but at the end of the conversation she shocked me a little. She told me I had to dress fancier and that I had to have my nails done if i wanted to find a job! In her own words: “You don’t have to wear a Channel, I mean you can maintain your own style. But still”. She probably meant well and I guess I have some shopping to do ;).
I didn’t have much time for breakfast this morning so last night I prepared some overnight oats.
When I got home from Zaventem I was starving! I made myself a hummus/feta/veggie stuffed pita.
For dinner I’m ordering shrimp stuffed tomato at the local diner. I won’t be making this one myself. A little lazyness on a Friday night isn’t a crime right? 😉 Tonight we’re also going out for a drink at the local pub called Mong Blok, nice way to start this festive weekend! So looking forward to the family Christmas dinner on Monday.

This morning I woke up and when I took my first step I almost face planted the floor! My legs and bum are on fire and burning like crazy! Yesterday’s Lower Body Blast definitely did the trick ;). If there is a burn I love it’s post workout muscle burn! Yesterday I found a recipe on Pinterest: High Protein Elvis Oats! My 2 favorite things in one recipe title! Elvis + oats must equal heaven. I made some changes to the recipe though.
- 1/3 cup oats
- 2/3 cup water
- 1/2 scoop chocolate protein powder
- 1/2 tsp unsweetened cocoa powder
- 1 tsp of peanut butter
- tsp of coconut butter
- pecans and coconut
- Cook the oats in the water until you reach the consistancy you like.
- Add the protein powder, cocoa powder.
- Stirr in the peanut butter.
- Top with coconut butter, pecans and shredded coconut.
I enjoyed these yummy oats while listening to “The King of Rock and Roll”!
After breakfast I went to Bio Planet for some shopping and tasting ;). My lunch was a healthy Green Monster!
- 1 banana
- 2 carrots
- 1Tbsp flax meal (ground flaxseeds)
- big handful of spinach
- 1 cucumber
- 1/2 cup almond milk
- 1/2 cup water
- 1/2 tsp Cinnamon
Easy peasy! everything goes into a blender and blend away! Put the liquids in first and chop up fruit and veggies.
This super healthy and delicious meal keeps you full and energized and you already have your veggies for the day.
The first snowflakes!!
What better way to start a Sunday morning than watching snowflakes swirling down from the sky and falling silently on the ground while enjoying a nice warm bowl of Chocolate Chip Oatmeal and some Sinatra! Only thing missing here is a fireplace and a big fluffy rug 😀
For lunch I made Chickpea and Feta Stuffed Bell Peppers. Yum!
