The World’s Best Pancake Ever!

Got up at 5 again for a workout today! 2 days in a row ūüôā I think I’m getting the hang of it. 40min of intervals on the stationary bike and some lifting (basic squats, curls,…). I’m kind of looking forward to moving in to our new place cause there is a huge fitness center 2min away. I’m tired of always sitting on the stationary bike to get some cardio in…a change of machinary would be nice! This morning I wanted a nice filling pancake instead of oats so I looked what I had on hand. The pancake turned out AMAZING! This is by far the best pancake I have ever made :).

Coconut Flour Apple Cnnamon Pancake

  • 1 egg + 2 egg whites
  • 1/2 apple thinly sliced
  • 2 Tablespoons Coconut flour, sifted
  • 1/2 teaspoon baking powder
  • A splash of almond milk
  • Stevia
  • Cinnamon

Directions:

  • ¬†In small bowl mix eggs with spalsh of almond milk and stevia. Add coconut flour (sifted in) and baking powder. Mix until smooth.
  • Slice your apple into very thin pieces. Set aside.
  • Spray some cooking spray on frying pan on high heat. Sir in cinnamon. Lay down the sliced apples in the pan and let cook for about 25-30 seconds. Pour in pancake batter and smooth over.¬† Cover then turn down heat to LOW. Let cook for 3 minutes.
  • Take off lid and flip the pancake. Put cover back on and cook for 1 minute longer. Slide out of pan and top with Greek yogurt.

This was pancake heaven!

Ok so I need to lose 4 pounds. Not that much but it seems impossible…I work out and eat pretty clean (minus the alcohol once in a while). I have never been a calorie counter! I once started doing it and felt like I was dealing with and thinking about food and amounts of food all day long…Now some one told me that if you want to lose those last 4 pounds you have to count…The what goes in must go out (through working out ofc ;)) rule is essential. So I think I will have to start counting again :(.

I was able to work on my own today as my trainer wasn’t working today. I loved doing everything myself. A lot of people where at the office today so the atmosphere was great. Fot lunch I had chicken with a bellpepper and tomato sauce and whole wheat rice. My mom made this last night and couldn’t stop bragging about it, so I took some with me to work. It was good indeed! Thumbs up mom!

Another pleasant surprise today was that the boss invited us to go eat some waffles! The sales team had landed a big contract and he felt it was a reason to celebrate. Fine by me! Some of the female¬†colleagues were complaning about gaining weight. I started telling them I make lots of healthy versions of all the decadent treats they’re having every day. Result, now I have to make treats for the offive! guess I know what to do this weekend.

Waffles as a decadent snack meant a not so decadent dinner…Turkey sandwich it was. Time to ring in the weekend! Have a great one people!

De Zogeraa Stays My Number One Restaurant!

Yesterday was great! We went to De Zogeraa, my favorite restaurant. We stayed until closing time and were the last ones to leave the place :p. As always the food and ambiance were fantastic.

I had a shrimp salad. I adore shrimps and at De Zogeraa they make the best shrimp salad!

Jonas had ribs and green pepper sauce. He recieved two strings of ribs! He was able to eat everything but it was a huge challange.

This morning I woke up a little hungover…Luckily I made appel fritter pancakes yesterday so breakfast was ready in no time.

We spent the rest of the day being lazy and watching some football. Lazy sunday! For lunch and dinner I made a greek salad wich I ate with some whole wheat bread.

Greek Salad

Ingredients:

  • 2 cucumbers, seeded and chopped
  • 3 tomatoes, seeded and chopped
  • 1 red onion, chopped
  • 1/3 cup finely chopped fresh dill
  • 3 tablespoons white wine vinegar
  • 1/4 cup olive oil
  • 1 lime, juiced
  • 1 teaspoon minced garlic
  • 1/2 cup crumbled feta cheese
  • salt and pepper

Directions:

In a good sized bowl, toss all of the ingredients together. Season with salt and pepper. If you have time, cover and store in the refrigerator for a few hours to let the flavors blend.

Enough With the Snow Already!

We woke up today and again it was snowing…I’ve had it with these freezing temperatures and snow! Every morning walking to the bus stop and waiting for the bus while my toes and fingers freeze to the point of almost falling of. The weather man promised us that next week temperatures are going up and the snow will start to melt. Thank god! I wanted to go for a run but that’s not going to happen.¬†Instead we went for some apartment stuff shopping. Cutlery, cups, mugs… the works.

For breakfast I made some Creamy Chocolate Chip Oats.

Ingredients:

  • 1/2 cup oats
  • 1 cup water
  • 1/2 cup almond milk
  • 2 Tbsp chocolate chips

Directions:

Mix oats and water and cook in the microwave for 2min. Poor in almond milk to create creamyness and stir in chocolate chips.

When we got home I had lunch. Something light as tonight where going out for dinner. At De Zogeraa the portions are enormous! I had to make sure to leave enough room;). I just ate some rice cakes with some laughing cow cheese and figs.

I also made tomorrow’s breakfast already! Time management;). Apple Ring Pancakes, they look and smell amazing! I had to refrain myself from devouring them all at once. look at these babies!

Apple Ring Pancakes

Ingredients:

  • 1/3 cup Whole wheat flour
  • 2 tbsp Old fashioned oats
  • 1 tsp Ground cinnamon
  • 3/4 tsp Baking powder
  • Dash of salt
  • 1 tsp Vanilla
  • 1 packet vanilla stevia
  • 1/3 cup Almond milk
  • 1 medium/large Apple
  • Coconut oil for baking

Directions:

Heat a flat pan over medium-low heat.

  • Mix together the flour, oats, cinnamon, baking powder, and salt. Set aside.
  • Peel the apple (if you want).
  • Core and thinly slice the apple.¬† Thinner slices will result in a softer apple pancake, whereas, thicker slices will stay more crunchy.¬† ( I ended up with about 7 rings, which I found to be a bit thick in the end).
  • Add the vanilla, stevia, and milk to the dry pancake mix.¬† Stir until combined, but do not over mix.
  • Dip one apple slice in the pancake¬†batter at a time and place on the pan.
  • Cook like a normal pancake and enjoy!

I’m going to get ready for my workout. Probably a circuit and a plank workout. After that it’s almost restaurant time!

Pancakes For Dinner? Yes Please!

Last day of the week! So much to process this last week. I think I need a weekend to get everything organized inside my brain…After work I’m going to take a relaxing bath and just soak a little. I had another great night sleep! This last week has been the best week of sleep in months! Tomorrow we’re also going to one of my favorite restaurants for my father-in-law’s birthday! The Zogeraa it’s called. Real good food! Looking forward to it. Hope I don’t forget to take some pictures.

Blueberry Overnight Oats!

The morning was pretty calm as my trainer had a meeting. I had to do 1 file start-up and answer the phone. I looked for some more potential apartments because 2 of the apartments we wanted to visit were already taken :(. I found some new ones, hope we get there in time! For lunch I had another veggieburger with some spinach mashed potatoes my mom made yesterday. I’m sure gonna miss my mother when I move out. She always made the dinner I requested so I could eat after my workout and shower without having to cook first…

Today I came home craving pancakes so I decided to make them for dinner :). I was also craving chocolate so I made Brownie Batter Pancakes. The best!

Brownie Batter Pancakes

Ingredients:

Ingredients:

  • 1/4 cup whole wheat flour
  • 1/4 tsp baking powder
  • 1 tbsp unsweetened cocoa powder
  • 1 1/2 packets nunaturals stevia or 1 tbsp + 1 tsp sugar (you can use less if you‚Äôre planning to top with syrup and don‚Äôt want the actual pancakes to taste sweet)
  • pinch of salt (optional)
  • 1 1/2 tbsp unsweetened applesauce
  • 1 tsp pure vanilla extract
  • 5 1/2 tbsp almond milk

Directions:

Mix dry ingredients very well, then add wet. Make pancakes! There are only 130 calories in this entire recipe. To make them more substantial, feel free to make a bigger serving and/or go crazy with the toppings!! Who knew such decadence could be healthy?!

Roses and Pancakes

This morning I tested the Brinta¬†my mother bought yesterday. It was amazing! Kind of like the porridge they eat in England. I recently started following Emily’s blog. She eats a lot of porridge instead of oatmeal so I’m glad to have tested this porridge. It’s sooo good! Maybe even better than oats…It kept me full for hours. I also used ¬†Emily’s Cherry Bakewell Porridge recipe, but I used dates instead of cherries, almond milk instead of soy milk and walnuts instead of almonds cause I didn’t have any of the ingredients needed for the original recipe. Tasted Awesome!

I just recently got a job and they invited me to come have a drink at their New Year’s reception this afternoon. This meant I had to do my workout before lunch again. I started with a 15min interval on the stationary bike, then 1 round of yesterday’s circuit and to end my workout I did a plank workout from the Purelytwins blog.

For lunch I made a blueberry proteine smoothie. I took a shower and left for the New Year’s reception. I had a great time! No better way to get to know people than over a nice glass of champagne and some pancakes! I even recieved a bouquet of pink roses and some more pancakes to take home with me. Can’t wait to start working next week!

For dinner…well I kind of stuffed myself with pancakes and champagne so I guess you can call that my dinner :). I’m going to take another shower now cause I’m feeling a little buzzed due to a champagne overdose…

Snow and Cookies!

During the night the winter gods decided to give us a fresh layer of fluffy white snow. Although it looks fantastic I feel bad for the people who have to defy these kind of weather conditions going to work in the morning. I on the other hand woke up enjoying the cozy atmosphere of winter. My brother wasn’t brave enough to plow his way through the snow to get to the station and decided to skip class today, wich I didn’t mind. A cozy breaky it was! Once again I made proteine pancakes. Tomorrow I’m going for easy and fast oatmeal again as I have an appointment at a company for a second interview. Looks like tomorrow morning I’ll be the one plowing though the snow :(.

1 kiwi a day keeps the doctor away!

For lunch I had a cream cheese and hummmmmmus bagel. Hummus just sparks up every meal in my opinion.

Given the weather conditions I fond it a perfect afternoon for some nice and warm cookies! First I wanted to make chocolate chip oatmeal cookies but I didn’t have enough oats. I decided to make Paleo Coconut Chocoloate Chip Cookies.

Paleo Coconut Chocoloate Chip Cookies

Ingredienst:

  • 1¬†1/2 Bananas
  • 1 Tbsp Lemon Zest
  • 1 Tbsp Chia Seeds
  • 1 Tbsp Chocolate chips
  • Stevia to taste
  • 2 Tbsp Raw Unsweetened Coconut
  • 1/4 Cup Ground Flax
  • 1/4 Cup Coconut Flour
  • 1/2 Tsp Vanilla

Directions:

  • Preheat oven to 325 degrees.
  • Add All ingredients into a mixing bowl.
  • Mix together until bananas are mashed and a cookie dough texture is formed. You can use an electric mixer or by hand.
  • Spray a baking sheet with cooking spray.
  • Place tbsp sized drops onto baking sheet. Press down with a spoon.
  • Bake 16min.

Makes about 15 big cookies. Enjoy!

My workout for today was the lower body blast. Hit the spot!

The only thing I’m not looking forward to when I’ll have a job is working out after work or even before. I’m not a morning person when it comes to working out so thats a no no. Hopefully I’ll still have the energy to do so afterwards!

Dinner was absolutely fabulous! I made Lentil¬†Sloppy Joes in the afternoon so that I didn’t have to slave away behind the stove with a growling stomach after my workout. Glad I had so much energy today!¬†sloppys

I’m back!

Ok, so I took a break from blogging for a while. Kind of a holliday break let’s say. I was also having a rough time not finding a job and all…I just wasn’t feeling it anymore. I STILL haven’t found a job…but I have been invited after a first job interview to come and work for an hour at an audit company to show me what the job is like. I guess that’s a good sign! It’s this Wednesday morning. With a little luck I’ll be employed by the end of this month!(need to stop getting my hopes up). But enough whining for today ;). I hope everyone had a wonderful holiday season! I kept it fairly healthy (except for all the wine, oeps). It’s understandable that my new year’s resolution this year was no alcohol for 1 month and less alcohol overall. My last year’s resolution was to quit smoking and now, one year later, I am still smoke free!

Now, let’s talk food! I have always been an oatmeal person but the last few weeks I wanted a change. Don’t get me wrong I still love oats, but I started loving pancakes in the morning! I need to lose some weight and maybe by changing my carb loaded breakfast into a proteine one is going to get me the results I need. Initially I thought I was going to miss my sweet little oats but I must admit I’m loving the pancakes!

Proteine Pancakes

Ingredients:

  • 3 egg whites
  • 1 banana
  • 1 scoop vanilla proteine powder
  • 1 Tbsp flax meal

Directions:

blend everything in a blender or by hand:

  • Mash the banana and wisk in egg whites.
  • Add the other ingredienst and mix well.
  • Turn your frying pan on medium-high (not too hot!)
  • Pour 1/2 the batter onto frying pan.
  • Cook each side until golden brown.

Top with fruit, almond or peanut butter. I topped mine with greek yogurt and blueberries.

After breakfast I watched the new epi of Californication and Girls. Girls on HBO is THE best tv show ever! ¬†Lena Dunham is my new favorite actress! Before lunch I went for a 5 mile run. Everything was covered in snow and the scenery was breathtaking! For lunch I had a turkey sandwich and some almonds on the side. Dinner was a winner! I first wanted to eat what my mother had prepared, spaghetti bolognese. Sadly enough her sauce failed once again (I didn’t say anything though :p). After one bite I decided not to continue and make myself a dinner smoothie.

  • 6 Medjool dates, torn in half, pits removed
  • 1 1/2 cups almond milk
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon flax meal
  • 1 scoop vanilla proteine powder
  • some frozen blueberries

Directions:

Blend away!
