Beste Apartment Ever + Morning Workout Rocked!

Ok so yesterday Jonas and I went to see our first apartment. It was HUGE! 3 bedrooms, 2 bathrooms, 3 toilets, a livingroom the size of a football field, a fully equipped kitchen and a little cozy terrace. There just isn’t a bigger and more beautiful place out there…seriously I checked :). The good news is we can sign the contract Saturday! One month and the dream Apartment/house is ours! So happy. We wanted something big enough to keep our own space. To me having some time to oneself is important. The idea is to stay together for life so giving each other enough space is a must. And if there is something that this place has got enough of it’s space. More good news, I got up at 5 today for a workout! I must admit it was hard to jump out of my cozy and warm bed into my sports gear…but once I got started I felt great. I read some tips on how to make a morning workout easier :p. So I prepared everything, layed out my clothes, water, just had to get out of bed and ready to go. Also didn’t hit the snooze button! Must say I had energy for two afterwards. For breakfast I had yesterday’s fruity oatmeal bowl again. I think these are my favorites now.

For lunch I had a simple turkey sandwish a kiwi and a carrot. Everyone else had kebabs and chocolate bars for lunch…I will not cave! :p I had my dose of chocolate after dinner, had some oatmeal with dark chocolate chips.

For dinner I made salmon with grilled veggies and some fruit and feta sprinkels. DELECIOUS! I love combining salty savoury and sweet.

Appartment Number One!

I woke u this morning without a breakfast plan! normally I have everything worked out in my mind or at least some overnight oats in the fridge…This morning I had to improvise. Must say it was rather early to start thinking :). I came up with this:

Fruity Mix Oats

Ingredients:

  • 1/2 cup Oatmeal
  • 1/2 cup water
  • 1/2 cup almond millk
  • 1/2 apple cubed
  • 1/2 sliced banana
  • 1/4 cup blueberries
  • 6 almonds
  • Cinnamon powder and Stevia to taste
  • 1/2 tsp vanilla

Direcetions:

  • Mix everything together and microwave for 3min
  • let sit for a few minutes before you devour them!

Lots of colours and tasted great! The softness and thinkness of the oats and banana combined with the crunch of the apple and nuts where a perfect combo!

Tonight we are visiting our first apartment! So excited! It’s a really big one. Jonas doesn’t like the floor and framework though…But it’s a huge place with 3 bedrooms and 2 floors and not even one of our more expensive choices. I would like at least 2 bedrooms. This one has 3, one to turn into a fitness area, one chill out/guest room and our bedroom. High demands for a childless couple looking to find there first apartment :p. As long as it stays affordable why not.

I had to work solo again this morning. Not that I mind. I like the freedom and not to be watched constantly. Of course my work took a bit longer having to work everything out on my own. I was glad lunchtime had arrived! The Dutch freelancer was back at the office today and he kind of  makes lunch a bit more vibrant, I guess thats what Dutch people tend to do. I enjoyed my Fruity Tuna Salad with a whole wheat bagel.

When I got home I couldn’t workout because of the apartment visit so I made a quick dinner first. Veggie burger and mixed salad…nothing special. Tomorrow morning I’m going to get up at 5 for a workout. I know…I’ve already made myself the promise to become a morning workout person but tomorrow I’m really going to try. If it works out (see what I did there;)) and I get to work in time and stay productive I will probably try to do it for real. I need more time after work to commit to making real dinners and spend more time with the loved ones :).

Roses and Pancakes

This morning I tested the Brinta my mother bought yesterday. It was amazing! Kind of like the porridge they eat in England. I recently started following Emily’s blog. She eats a lot of porridge instead of oatmeal so I’m glad to have tested this porridge. It’s sooo good! Maybe even better than oats…It kept me full for hours. I also used  Emily’s Cherry Bakewell Porridge recipe, but I used dates instead of cherries, almond milk instead of soy milk and walnuts instead of almonds cause I didn’t have any of the ingredients needed for the original recipe. Tasted Awesome!

I just recently got a job and they invited me to come have a drink at their New Year’s reception this afternoon. This meant I had to do my workout before lunch again. I started with a 15min interval on the stationary bike, then 1 round of yesterday’s circuit and to end my workout I did a plank workout from the Purelytwins blog.

For lunch I made a blueberry proteine smoothie. I took a shower and left for the New Year’s reception. I had a great time! No better way to get to know people than over a nice glass of champagne and some pancakes! I even recieved a bouquet of pink roses and some more pancakes to take home with me. Can’t wait to start working next week!

For dinner…well I kind of stuffed myself with pancakes and champagne so I guess you can call that my dinner :). I’m going to take another shower now cause I’m feeling a little buzzed due to a champagne overdose…

The Job is Mine!

This morning I woke up in a smoothie mood. I put on some nice wake up music and got started. This is a good song to wake up to! I felt the warmth of hot Cuba even though everything was covered in snow outside.

I blended together some frozen blueberries, half a frozen banana, a cup of non fat Greek yogurt, a scoop of vanilla proteine powder and a spalsh of almond milk. Yum!

I decided to do my workout before lunch today. I had to go to the company I’m applying at to ‘work’ for a couple of hours in the afternoon. My workout was a mixture of circuit and lifting.

Circuit Lifting Combo

Circuit:

  • 1min Jumping jacks
  • 1min Burpees
  • 1min Jump rope
  • 1min High knees
  • 1min Shadow boxing
  • 1min Sprint in place
  • 1min Burpees
  • 1min Jumping jacks
  • 1min Over the river hops
  • 1min Scissor jumps
  • 1min High knees
  • 1min Mummy kicks
  • 1min But kickers
  • 1min jog in place

Lifting:

Arms

  • 15 bicep curls
  • 15 Lateral Raise
  • 15 Tricep Kick Backs

Legs

  • 15 Squats
  • 15 Plié Squats
  • 15 Stationary Lunges

Use weights that are heavy enough, after 15 reps you should’nt be able to do another rep.

Repeat the circuit 2 or 3 times and the lifting 3 rounds. You can also split cardio en lifting. Cardio in the morning and strength in the afternoon or evening. I wanted to be able to chill out in the eveing ;).

For lunch I made a Fruity Tuna Salad! It was the best tuna salad I had ever made!

Fruity Tuna Salad

Ingredients:

  • 1/2 Can tuna (in water)
  • 1 Tbsp Light dressing
  • 1 Tbsp 0% fat Greek yogurt
  • 10 Grapes sliced
  • 1 Tbsp Chopped almonds
  • 1/2 Tbsp Stevia
  • 1/2 Celery stick chopped
  • 1 Tbsp Chopped green onion

Directions:

I think you know what to do here 😉

Seved on toasted whole wheat bread.

After lunch I went to the company I was applying and I spent the afternoon learning about the job. After a couple of hours they told me that the job was mine! I was so happy! I’m now an Audit Administrator at a company called Management Information. I got to know some more colleagues and they were all super nice and funny. They even invited me to the New Year’s drink tomorrow.

When I got home I wasn’t in the mood to make a fancy dinner. I just ate a hummus and goat cheese sandwich and an apple.

I’m back!

Ok, so I took a break from blogging for a while. Kind of a holliday break let’s say. I was also having a rough time not finding a job and all…I just wasn’t feeling it anymore. I STILL haven’t found a job…but I have been invited after a first job interview to come and work for an hour at an audit company to show me what the job is like. I guess that’s a good sign! It’s this Wednesday morning. With a little luck I’ll be employed by the end of this month!(need to stop getting my hopes up). But enough whining for today ;). I hope everyone had a wonderful holiday season! I kept it fairly healthy (except for all the wine, oeps). It’s understandable that my new year’s resolution this year was no alcohol for 1 month and less alcohol overall. My last year’s resolution was to quit smoking and now, one year later, I am still smoke free!

Now, let’s talk food! I have always been an oatmeal person but the last few weeks I wanted a change. Don’t get me wrong I still love oats, but I started loving pancakes in the morning! I need to lose some weight and maybe by changing my carb loaded breakfast into a proteine one is going to get me the results I need. Initially I thought I was going to miss my sweet little oats but I must admit I’m loving the pancakes!

Proteine Pancakes

Ingredients:

  • 3 egg whites
  • 1 banana
  • 1 scoop vanilla proteine powder
  • 1 Tbsp flax meal

Directions:

blend everything in a blender or by hand:

  • Mash the banana and wisk in egg whites.
  • Add the other ingredienst and mix well.
  • Turn your frying pan on medium-high (not too hot!)
  • Pour 1/2 the batter onto frying pan.
  • Cook each side until golden brown.

Top with fruit, almond or peanut butter. I topped mine with greek yogurt and blueberries.

After breakfast I watched the new epi of Californication and Girls. Girls on HBO is THE best tv show ever!  Lena Dunham is my new favorite actress! Before lunch I went for a 5 mile run. Everything was covered in snow and the scenery was breathtaking! For lunch I had a turkey sandwich and some almonds on the side. Dinner was a winner! I first wanted to eat what my mother had prepared, spaghetti bolognese. Sadly enough her sauce failed once again (I didn’t say anything though :p). After one bite I decided not to continue and make myself a dinner smoothie.

  • 6 Medjool dates, torn in half, pits removed
  • 1 1/2 cups almond milk
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon flax meal
  • 1 scoop vanilla proteine powder
  • some frozen blueberries

Directions:

Blend away!

Something Something Chocolate

Today we went Christmas shopping. Underneath the Christmas tree lies a BIG present with Jonas and my name on it! We also had to buy some good wine for Christmass Eve. We asked the wine specialist for advice and he let us taste this very good red one. I love red wine!

When we got home I decided to try another cake that I can make for our Christmas dessert. Coconut Flour Chocolate Cake.

Ingredients:

  • 1/4 cup (30 g / 1 oz)  cocoa or cacao powder
  • 1/4 cup (35 g / 1  1/4 oz) coconut flour (see notes )
  • 1 teaspoon (5 g) gluten free baking powder
  • 1/2 teaspoon ground cinnamon
  • Pinch of sea salt
  • 4  eggs
  • 1/4 cup ( 3 tablespoons) honey or organic maple syrup
  • 1 teaspoon vanilla extract or 1/2 teaspoon vanilla bean paste
  • 1/4 cup (60 ml / 2 oz) macadamia nut oil or melted coconut oil or butter

Directions:

  • Preheat oven to 160 C.
  • Combine the cocoa, coconut flour, baking powder, cinnamon and sea salt.
  • Add the eggs, honey, vanilla and oil.
  • Mix well until smooth and combined.
  • Spoon into a small 15  – 20 cm baking tin lined with baking paper – the smaller the tin the higher the cake… or alternatively spoon into 8 lined cup cake tins.
  • Bake the cake for 40 minutes or until cooked through. Bake smaller cupcakes for about 20 – 25 minutes.
  • Remove from the oven and allow to cool.

It’s stil in the over at the moment! I hope this one is going to be the one!

ingredients:

  • 1 apple
  • 1  cup almond milk
  • 1 cup water
  • 1 cup oats
  • 2 tablespoons Stevia
  • 1 teaspoon ground cinnamon
  • 1 tablespoon ground flax seed

Directions:

Combine all the ingredients. Cover and put in the fridge overnight.

For lunch I had a turky and cheese sandwish.

I bought myself some sushi at the grocery store for dinner but they didn’t taste very good so I didn’t eat them all…I ate some nut bread with PB&J instead ;).

All I Want for Christmas is a Job!

Ok so my day consisted of more job searching. I’ve been searching for months now and stil nothing…Being at home is starting to drive me crazy! Tomorrow I have another job interview. Please Santa, all I want for Christmas is a job! To keep myself from going crazy I decorated the Chrismas tree! Sushi was going crazy again sniffing the tree and playing with the baubles :). I also went to Bio Planet for some ingredients to bake a gingerbread pie.

For breakfast I had pancakes topped with an almond butter and Greek yogurt mixture. Not bad!

Ingredients:

  • 1/2 cup egg whites
  • 1/4 cup  rolled oats* or oat flour ( DIY:grind rolled oats in your blender)
  • 1 tablespoon almond milk, unsweetened
  • Stevia powder
  • dash of salt

Directions:

In a blender or whisk by hand in a bowl the egg whites, oats, almond milk, stevia and salt. Spray a small saute pan with nonstick cooking spray. Heat on medium high heat and pour half of batter into pan. Cook for about 2-3 minutes until edges are set and somewhat set near center. Flip over carefully and cook another 2 minutes. Do the same for the other half.

I mixed 2 Tbsp of Greek yogurt with 1 Tbsp of almond butter and some stevia to top the pancakes.

We are all celebrating Chistmas at Jonas’ place. I want to bake a healthy pie for our Christmas dessert. I tested the first option today.

It wasn’t bad but I didn’t have a YUMMY! feeling. Next time that I’m making this one I’ll have to add some more spices. Tomorrow I’m trying another pie ;).

Ingredients:

  • 2 eggs
  • 1 cup  almond milk
  • 1/2 cup apple sauce
  • 1/4 cup molasses
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon ginger
  • 3 cups oatmeal

Directions:

Combine above ingredients, mixing well. Pour into greased pan.
Bake at 350 degrees for 30 minutes.

If you are going to try this one I would add some more cinnamon and ginger and maybe add some nutmeg, allspice, cloves and cardamom. experiment away!

For lunch I had my Crunchy Autumn Salad. My favorite salad!

For dinner I made Cauliflower Fritters.

Ingredients:

  • Half a large head cauliflower
  • 1 carrot, grated
  • 2 whole eggs
  • 1/4 cup feta cheese
  • 1/4 cup flaxseed meal
  • 1/4 cup raw, unsalted sunflower seeds
  • 1/4 cup hazelnuts, finely chopped
  • 1/4 cup fresh parsley, finely chopped
  • 1 tsp lime juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp ground cinnamon
  • 1/4 tsp smoked paprika
  • pinch cayenne pepper

Directions:

  • Cut cauliflower into little florets and add to the bowl of your food processor. Process on pulse until cauliflower has texture of large grains of cracked wheat. Transfer to a large mixing bowl.
  • Add the rest of the ingredients and mix until well combined.
  • Heat a splash of olive oil in a frying pan and carefully drop about 1/4 of a cup of mixture for each fritter.
  • Cook three or four fritters at a time for 2 – 3 minutes on each side, until golden brown, then keep warm while you cook the remaining fritters.
  • Serve warm (I like them cold also) with a few fresh vegetables or a nice green salad.

This makes 8 fritters and serves 2.
