And now we wait…

I spent almost all morning in an interim office doing all sorts of tests. Big shocker of the day, I passed the exell test! Knowing that I flunked my IT exam in college like 3 times… 🙂 The interim lady was going to introduce me to a company that specialises in IT…(oops).

My pre iterim trip breakfast:

Applesauce Oats:

 

 

 

 

 

 

 

 

Ingredients:

  • 1/4 cup unsweetened chunky applesauce
  • 1/2 cup oats
  • 1 cup almond milk
  • 1/4 tsp almond extract
  • 1/2 tsp cinnamon
  • 1 tbsp peanut butter

Cook the oats in the almondmilk until you reach the consistancy you like. then stir in the applesauce until its warm. when it’s ready add the other ingredients and top with peanut butter.

After my interim visit I went to the supermarket for some ingredients to make an awesome autumn salade! This is what I came up with:

Crunchy Autumn Salad

Ingredients:

  • 6 cups baby spinach
  • 1 pear, chopped
  • 1 apple, chopped
  • 1/4 cup walnuts chopped
  • 1/4 cup grapes
  • 1/4 cup crumbled feta cheese
  • 1/4 cup light yoghurt dressing
  • 2 Tablespoons balsamic vinegar

Directions:

Chop up the apple, pear, grapes and nuts and mix in the rest of the ingredients. Done! This serves 2 portions.

note: You can also add some crisped bacon. I’m not a meat person and don’t like meat in salads. Your choice!
